Drip Coffee

Step 1

Measure and grind beans. Using a fine grind, fill and level your portafilter. You should have a rounded pile of ground coffee.  Use the side of your finger to evenly distribute the grounds.

Step 2

Tamp firmly. Apply a flat, even tamp to your grounds using 40 lbs of pressure. This will prevent an uneven bed and avoid channeling and over/under extraction. Clean loose grounds off portafilter surfaces.

Step 3

Pull shot into desired vessel. Observe flow according to your recipe. Shot should take 22 – 27 seconds and 3 oz volume. Drink immediately OR combine with other ingredients to make an espresso based beverage.

Armando's Blend

Step 1

Pour 1 cup of water. Add 6 ounces of coffee. Slowly pour 3 more cups of water over the grounds in a circular motion, saturating all the grounds. Wait 5 minutes. Add the remaining 6 ounces of coffee.

Slowly pour in the remaining 3 cups of water, again saturating the grounds. DO NOT stir, as this may clog the filter. Using the back of a spoon, gently ensure that all the grounds are wet, and then flatten the coffee.

Step 2

Steep: 12-24 hours. Leave the coffee to steep, undisturbed, for 12-24 hours, depending on how you like it. Start with 12 hours and experiment from there.

Step 3

Prepare your cup

You have made a cold brew concentrate. We recommend making each cup of iced coffee by combining 1 part coffee concentrate with 1 part water and pouring directly over ice. Mix the coffee how you like it, adding milk or dairy alternative, and enjoy!
